The typical Rome Pinsa, crispy and soft, is a clever mix of ancient wheat flour, soy and rice. It contains a higher quantity of water and is equivalent to 30%-40% fewer calories than a classic pizza, which is why it is lighter and easier to digest. It owes its name to the Latin word "Pinsere", which means to lengthen. What is the Pinsa Romana? The word "pinsa" comes from the Latin "pinsere" which means to lengthen or extend. It is made from wheat flour, soy flour, rice flour and sourdough. This mixture makes it possible to produce a paste with high hydration. The fermentation period can be up to 72 hours. (75cl) Labruyère-Prieur Selection - Terroir: Commune of Fuissé. The vineyard occupies the slopes and the foot of these rocks on stony scree and clay-limestone soils from the Jurassic period. The hillsides form small creeks with fairly steep slopes, facing east and south-east, between 200 and 300 meters above sea level. Vinification: The grapes are harvested by hand in small crates then the whole bunches are pressed in a pneumatic press. (75 cl) Vincent and Pascal Maurel - Here the harvests are later than in the other areas of the appellation, resulting in wines that are clearly more complex. The wines are powerful but remain pure, balanced and are simply deep wines! All the cuvées deserve our attention, the marks awarded by the specialized press are laudatory, they range from 92-93 / 100 to 100/100.
(75cl) Jérôme Bressy arrived at the estate in 1996 and saw the creation of the cellar. A 13-hectare property, the vineyard is spread over 8 plots of Rasteau divided into hillsides, terraces, foothills on a clay-limestone marl soil. Organic farming arrived in 1989 and biodynamic farming since 2008 in the vineyards. Characteristics of black raspberry and strawberry mingle with notes of incense, white and black pepper, fruitcake, plum, garrigue and Asian spices on the nose. Full-bodied, deep and concentrated on the palate, it has lovely purity, no harsh edges, and a fabulous clean, dry finish.

(75cl) Tenuta San Guido: Toscana / Wine Spectator 2019 - 90 / 100 - this wine was born caressed by the sea breeze and lulled by the gentle hills that surround Tenuta San Guido. On the nose, the enveloping notes of wild berries and ripe black cherries are accompanied by hints of Mediterranean scrub, briny sensations and soft tones of sweet spices. The sip is sweet but there are lively tannins, freshness and flavor, the latter especially at the end, to give the right taste rhythm. It is here, over the 13 kilometers that stretch between the sea and the hills, that one of the most appreciated wines in the world, Sassicaia, is produced.

PARKER: 96/100 WINE SPECTATOR: 97/100 The Antinori family has been involved in the art of winemaking since 1385, when Giovanni di Piero Antinori became a member of the "Arte Fiorentina dei Vinattieri", the Association of Florentine Winegrowers. Throughout its history, for twenty-six generations, the Antinori family has directly managed the estate, making innovative decisions while respecting traditions and the environment. Tignanello was the first Sangiovese to be aged in barrels, the first contemporary red wine blended with traditional grape varieties (notably Cabernet) and one of the first wines from the Chianti Classico region not to use white grapes. The 2015 Tignanello has a very intense ruby color. On the nose, the notes of ripe red fruits, blackcurrant and blackberries are in perfect balance with hints of chocolate and liquorice. The palate is rich, full-bodied, vibrant and endowed with lively and silky tannins which give great complexity as well as significant length to the finish.

🟨 The Great Whites

Clos Blanc Vougeot 1er cru 2014 Monopole
(75cl) Domaine de la VOUGERAIE The Clos-Vougeot white does not exist. It is indeed the Clos blanc de Vougeot which is the neighboring vine of the famous Château du Clos de Vougeot, which produces a rare wine, classified as Vougeot Premier Cru, a monopoly of the Domaine de la Vougeraie. Vougeot is a very small appellation, with just over 10 hectares in red and 3.66 hectares in white. The first white wines are rare there and this plot represents a little less than 2 hectares. The plot is called the White Vine, because the monks had already planted it in white. They harvested it for the first time in 1110. It was their mass wine, a nectar from Burgundy, their little white from Cîteaux. 2014 was a very good vintage for the white wines of Burgundy. The vineyard has been managed biodynamically and approved in organic farming since 1999.
(75cl) Domaine MALDANT PAUVELOT - Mythical appellation that of Corton Charlemagne. We can speak of an exceptional vintage. The dress is sumptuous, shiny and golden with the most beautiful effect. The first nose is racy, pure, on citrus fruits with delicious sweet tones. The mouth is round and straight with a nice fat. A model of balance, we are close to the peaks.
(75cl) Domaine Baron THENARD - The most famous of the Grands Crus in white Burgundy wine in the communes of Puligny Montrachet and Chassagne Montrachet. Their soils, exposures and slopes allow the Chardonnay grape variety to express all its finesse and aromatic fullness, with notes of butter, biscuit, dried fruit and spices. The fame of this superb Domaine Bourguignon is undoubtedly due to an exceptional 17th century cellar on which the family has worked hard to produce high quality wines. The family is also famous thanks to Paul Thénard, then a member of the Academy of Sciences, who discovered carbon disulfide to fight Phylloxera in the 19th century.

(75cl) ARNOUX / This confidential cuvée is a tribute to the winemaking history of the Arnoux family. From a selection of plots of old vines over 50 years old, the Vacqueyras 1717 reveals a magnificent, intense bouquet of aromas of jammy black fruits interwoven with fine spicy and vanilla notes. The palate reveals itself opulent, bursting with fruit, in an incredibly silky and velvety tannic structure, until a long melted finish with spicy accents.

Corton Clos du Roi Grand Cru 2017
(75cl) Domaine Thénard - The hill of Corton brings together on its territory the villages of Ladoix-Serrigny, Aloxe Corton and Pernand Vergelesses, mythical names in Burgundy for the excellent quality of their wines, which have made them famous for centuries. The vineyards are located at an altitude of approximately 250-330 meters above sea level. The grapes used to make Domaine Thenard's Corton Clos du Roi Grand Cru come from vineyards planted in the highest and lowest areas. best exposed on high value clay-limestone soils. After fermentation in temperature-controlled wooden vats, the wine matures for 18 months in oak barrels, 30% of which are new and the rest already used.
Haute-Serre Castle - WOW Icon 2015
(75cl) GEORGES VIGOUROUX - Aging takes place in new French barrels for 24 months. They are selected according to the species (Tronçais, Vosges, Nièvre), the drying times (24 to 36 months in the open air) and according to the heating. The wines are then kept at rest for 3 to 4 months after bottling before being marketed. Icons wines result from a selection and a blend of the best barrels representing the quintessence of the domain. The production is around 3000 bottles per year but may decrease depending on the final selections at the end of aging.
(75cl) MALDANT-PAUVELOT - This is a Grand Cru worthy of the name, with perfectly mastered vinification. The vine flourishes on the mountain of Corton, offering Pinot Noir its full development, for our greatest pleasure. An aromatic bouquet unfolds, with fruity and subtly spicy accents. Flesh and silky tannins on the palate.
(75cl) - DOMAINE DE LA VOUGERAIE - 94/100 PARKER - An elegant and delicate nose of infusion of dried rose petals and red fruit mixed with a nice note of flint; a beautiful acidity foreshadowing a magnificent wine in a few years. Its perfect balance and solid finish are revealed with precision in a velvety style

Bollinger rosé 2006
(75 cl) - This 2006 Rosé is a first for Bollinger, where the only vintage rosé is usually La Grande Anne Rosé. But 2006 was an exceptional year, with a very beautiful spring and a superb month of September, making it possible to obtain grapes with remarkable maturity. Faced with such quality grapes, and the magnificent red wine obtained, the cellar master of the Bollinger house, Mathieu Kauffmann, decided to create a singular rosé cuvée. A limited edition made from nine vintages from the Montagne de Reims, the Côte des Blancs and the Marne Valley, only terroirs classified as Premiers and Grands Crus. The blend is based on a marriage of 72% Pinot Noir and 28% Chardonnay. To this blend is added 7% red wine, made from the vines that the house owns in Aÿ. After 10 years in the cellar, this cuvée offers a pink color with salmon reflections, and fine bubbles that form a nice string of bubbles. On the palate, it is a round champagne, charming, expressive, which unrolls notes of fruit paste and honey. The finish is remarkable, evoking in particular blood orange and citrus fruits.

Malolactic fermentation is strictly avoided for all wines, a house tradition. Only the vinosity of the ripe fruit and a precise dosage compensates for the acidity. Artisanal Distillery - Meursault

This Blackcurrant liqueur is made exclusively with blackcurrant berries from the Noire de Bourgogne variety. Grown in Burgundy, they collect the berries at the end of the row on harvest day. The raw material is thus very fresh. Passed through then sorted by hand, they are then immersed in a large bath of alcohol to fix the aromas and anthocyanins. They then take their time to add the right amount of sugar and to find the perfect balance between rusticity, acidity and fruity blackcurrant. A great product that can complement all cocktails but which can above all be consumed alone.

The Lagunitas IPA, a mythical beer from the American brewery Lagunitas! This beer is indeed one of the oldest in the brewery since we find traces of it in 1995. Brewed from an excessively large number of hops, this bodybuilding beer is cut out for IPA lovers. This American beer presents us with a light golden blond color, topped with a classic white head. On the nose, we find the omnipresence of the waterfall with beautiful citrus and grapefruit notes as well as a fine malty touch. The palate is dry and grassy, ending in a bitter and long finish! Perfectly crafted, well chiselled, there is no shortage of qualifiers for this West Coast IPA… ideal for starting out with very hoppy beers like Daytime!

La Mort Subite ® Lambic Kriek is a subtle blend of young lambics and lambics aged in oak barrels, to which are added fresh cherries from Belgium! A real pearl of taste that combines the fruitiness of cherries with the acidity of lambic. To be consumed chilled at 4.5°, Mort Subite® Lambic Kriek has a delicate red color covered with a pink and creamy foam. The attack on the palate is soft with a small complex note, the sweetness of the morello cherry counterbalancing the acidity of the lambic.

Mort Subite is made up of a range of six Belgian Lambic-type beers. Its name derives from Pietjesbac, a Brussels dice game enjoyed by the creator of Mort Subite, Théophile Vossen. Mort Subite Witte Lambic is the perfect cross between a white beer and a lambic. Indeed this beer is made from a young, fruity and refreshing lambic. In the glass, it unveils a pale yellow, slightly hazy liquid topped with a long-lasting white solid head. It develops pleasant fruity aromas such as lemon, mandarin and peach. There are also finer flavors of lambic and spices. The palate is very sweet with equally fruity flavors: lemon, banana, citrus fruits and peach. To complete this, light touches of lambic bring a little acidity which gives pep to this white beer.
