Chamomile

Manzanilla is a generous and dry wine made with palomino grapes produced in the Marco de Jerez and aged in Sanlúcar de Barrameda under a layer of yeast called "veil of flower", which is called "biological aging". The Marco provides the raw material and the maritime climate, together with the Atlantic breezes, allow the wine to mature in a different way and acquire certain peculiar characteristics, different from those produced with the same method in Jerez or El Puerto de Santa María. , called the Criaderas y Soleras System.

Stale chamomile

It is an older chamomile, with some oxidative aging (not biological); it would be like an "amontillada" chamomile, with a little more alcohol and a more intense flavor.

Bodegas Argüeso. 100% fine Palomino. Lemon yellow, whitish, with unctuous tears. Pale in intensity, but on its branch. Generous

Fortified wines are defined in the Regulation of the Regulatory Council as dry wines (with a maximum residual sugar of 5 grams per liter). Its production process includes a complete fermentation of the musts -usually Palomino grape- at the end of which the veil of "flower" yeasts appears in the base wine. The winemaker's decision to fortify the base wine at either 15º or above 17º of alcohol will determine the type of aging the wine will subsequently undergo. Pedro Ximenez Er Guerrita
Bodegas Er Guerrita. 100% Pedro Ximenez from the DO Montilla-Moriles subjected to sunlight, that is, dried in the sun to raisin and concentrate the sugar. Oxidative aging for 15 years. Alc: 18%. Generous sweet anthological where you have them.

Whites

Forlong 80/20
Forlong wineries. 100% fine Palomino. Vintage 2018. Alc 12.9%. 75 cl. Very peculiar young white wine, fermented with Pedro Ximénez skins as if it were a red wine. After about 25 days, the skins are removed and the wine is obtained. Once fermented, they are left in storage for 5 months so that they naturally decant. After this process, it is bottled without having undergone any treatment and without filtering. No added sulfites. View: Yellow with pinkish reflections. Nose: Tropical fruits, citrus notes, floral. Mouth: Fresh, broad, full-bodied, long and mineral finish.
The Olaso Pier
Bodegas Luis Pérez. Pasto wine, with a fruity and mineral character thanks to the Albariza soils. 70% Palomino Fino, 25% Pedro Ximenez, 5% Vidueño (Mantuo, Vijiriega, etc.). Alc 14%. 75 cl. 80% is fermented in stainless steel at a low temperature, the other 20% is sunbathed and fermented in wine from Jerez that slipped in December. Subsequently, the wine is assembled and aged for 6 months on lees in tank. On the nose there are notes of tropical fruits such as bananas and pineapple combined with some fresher ones such as apple and pear. In the mouth you can appreciate the savory sensations typical of the El Corregidor estate in the Carrascal estate that expands the wine into a long aftertaste.
San Diego Castle
Bodegas Barbadillo. 100% fine Palomino. Vintage 2020. Alc 12%. 75 cl. An icon and a reference at the national level. Floral, fruity, harmonious, light ... More than a wine. According to the company's accounting books, the name "White Wine of the Castle" dates from 1883. However, it was not until 1975 that bottling began by vintages, making it the first white wine produced in Andalusia. Today it is the best-selling white wine in Spain.

Forlong Assemblage 2017
Forlong wineries. Aging red. Merlot 60%, Tintilla de Rota 30% and Syrah 10%. Vintage 2017. Alc 15%. 75 cl. It is the first wine from the Forlong winery, and the "culprit" of creating a project that was born from the utopia of Rocío and Alejandro to make quality wines and organic aging in a setting where Sherry wines predominate. Aged for 6 months in clay jars and 12 months in oak barrels. View: Intense cherry with a medium layer Nose: Red and black fruits, violets, pepper, coffee. Mouth: Silky, enveloping, mineral finish.
Garum
Bodegas Luis Pérez. Merlot 70%, Syrah 15%, Petit Verdot 15%. From 11 to 14 months in barrels. Alc: 14.70%. It is characterized by a medium-high layer garnet color. On the nose it is intense and frank, with hints of undergrowth, ripe red fruit, spices, cherries, coffee and cocoa. It has a sweet tannin that makes it silky but powerful, with a roasted and coffee aftertaste. The gypsiferous marl wines are ample and have long aftertastes.
The triangle
Bodegas Luis Pérez. Tintilla 100%. Payment Balbaína. Alc: 14.50%. The grapes are selected on the table and subsequently vinified in stainless steel and open barrels for approximately 30 days in a very static process, with few pump-overs we try to respect the smoothness and elegance of the variety as much as possible. Finally, the wine is aged for about 5 months in wood for 5 years of use and an additional aging of 15 months in tank before being bottled. The nose is very spicy, highlighting the black pepper with hints of blackberries and cherries. In the mouth it is smooth with a step marked by freshness. It is very gastronomic due to the coastal verticality, and can be paired with very fatty foods.

Samaruco
Bodegas Luis Pérez. Syrah 50% and 50% Petit Verdot. Payment Corchuelo of the Hacienda Viña Hermosa. Alc: 15.00%. The harvest is manual in 15kg boxes, with grape selection in the vineyard and in the winery with a selection table. Each variety is vinified separately, after making a pre-fermentation maceration at 5 ° C, they ferment in stainless steel tanks at a controlled temperature, extending the maceration up to 20 days. After malolactic fermentation, the tanks to be assembled are selected and subsequently aged for 12 months in French oak barrels with a medium toast. The wine is bottled without clarifying or filtering. Before going on the market, it rests for a minimum of one year in the bottle. It is a mature, powerful and long wine. It stands out for an unusual balance between warmth and freshness and for its great varietal expression, with aromas of ripe black fruit, floral notes and Mediterranean grass. It is characterized by a medium-high layer garnet color. On the nose it is intense and frank, with hints of undergrowth, ripe red fruit, spices, cherries, coffee and cocoa. It is characterized by a sweet tannin that makes it silky but powerful, with a roasted and coffee aftertaste. The gypsiferous marl wines are broad and long aftertaste.
Oak entrechuelos
Bodegas Miguel Domecq. Short aging red wine made with Tempranillo, Merlot, Syrah and Cabernet Sauvignon. Alc: 14%. Cortijo de Torrecera (Jerez de la Frontera - Cádiz). It is a wine from the Land of Cádiz with grapes collected in a selected night harvest using inert gas. Pre-fermentation maceration at 10ºC for 5 days. Fermentation with selected yeasts at 24º-28º for 10 days. Post-fermentation maceration for 15 days with mixing of fine lees. We make the coupaga, each year differently depending on the conditions, of the four varieties, then the already assembled wine remains in French oak barrels for 6 months. It is light, smooth, very fruity and with just the right wood. Unpretentious, it is a wine for the day to day. Good intensity of color, with a lot of shine. Intense fruity, sweet and balsamic aromas. A mild acidity in the mouth intensifies these aromas. The subtle aromas of the French barrel soften and complex the expressive red fruit that we find. In the mouth it is broad, glyceric, very round. Ramón Bilbao Crianza 2017
Ramón Bilbao Winery. DO: Rioja. 100% Tempranillo. Alc: 14%. 75 cl. This wine has been aged for 14 months in American oak barrels, 8 months in the bottle. A renewed classic, versatile, fruity, balanced, irreplaceable at our table. Ruby red with certain nuances of youth in the form of violet notes. Fresh black fruit predominates, such as blackberry and black currant. Also the varietal aroma represented by liquorice. Blackberry yogurt notes. In the background, notes of wood appear.
