Burgundy Côte d'Or "Le Dessus de Prielles"
Domaine Gelin 2022 Located on the edge of the Fixin appellation, at the entrance to the village, this white Burgundy has nothing to envy of much more prestigious appellations. Aged for a long time in barrels and vats for 24 months, it is round, rich but nevertheless well balanced.
Chablis
Domaine Drouhin-Vaudon 2023 This Chablis comes from an estate of nearly 7 hectares with Kimmeridgian limestone soils. A terroir containing millions of tiny embedded marine fossils dating back hundreds of millions of years. These vines are on average 30 years old.
Rully "Moraine Plant"
Domaine Rois Mages 2022 This fruity, tender, and elegant Rully achieves the feat of combining opposites in the mouth, making it versatile in the kitchen. Its liveliness places it among the simple and tasteful aperitifs, while its broad and persistent aromatic range—Chardonnay obliges—makes it a staple in the kitchen.
Burgundy Aligoté 2023
Maison Lardy-Barberot 2023 A "muscular" Aligoté, aged in oak barrels, which gives it a beautiful roundness. However, we find the classic markers of this superb grape variety: liveliness, freshness, and a lemony fruitiness that makes it the ideal companion for an aperitif.
Chardonnay "The Cuvée of Pleasure" Late Harvest
Domaine des Terres Rouges 2022 A rare Burgundy Chardonnay vinified in late harvest. The wine has a beautiful golden hue with a yellow-gold sheen. The nose is very aromatic, intense, and releases subtle aromas of quince. On the palate, it is full of indulgence and balance.
Marsannay “Champsalomon”
Domaine Collotte 2022 Chardonnay is rare in Côte de Nuits but Marsannay is proud to adorn itself with all the colors in its appellation area. This white Marsannay offers a pale gold color, a lively nose with notes of honeysuckle, on the palate, these floral notes evolve towards more fat. Its beautiful minerality on the finish gives it excellent persistence.
Fixin
Domaine Vieux Collège 2022. The color shines a beautiful pale yellow tinged with green. The aromatic freshness is intense. Spicy notes (white pepper, bergamot) follow the initial, fruitier nose.

Wine in the red glass

Fixin 1er Cru “Clos de la Perrière” Monopole
Domaine Joliet 2022. The history of Domaine Joliet dates back to the Cîteaux monks who founded the Clos de la Perrière in the 12th century, a 5-hectare monopoly still in operation today. The buildings of Domaine Joliet preserve the memory of this remarkable past: exceptional vaulted cellars, old press... Under the leadership of Bénigne Joliet, a new modern winery was recently designed, but the wines are still aged in the centuries-old cellars!
Fixin
Domaine Gelin 2022. A Fixin full of finesse and elegance. It has a pleasant nose, with spicy notes of pepper and licorice. There are also lovely notes of red fruits, such as cherry and raspberry, almost a little jammy.
Savigny-les-Beaune "The Village" Monopoly
Domaine Henri de Villamont 2019 Monopole of the estate with an area of 4.5 hectares around the estate's cellars. Vines aged 35 years. Ruby color, very open nose offering aromas of red fruits with discreet peppery notes, round and structured palate with a beautiful length.
Burgundy "Old Vines"
Maison Vincent de Saint-Denis 2022 A “classic” Pinot Noir from the South of Burgundy. Cherry, licorice and a slight sweetness make it a wine of immediate pleasure.
Marsannay "The Longeroies"
Domaine Olivier Guyot 2022. This wine has a beautiful ruby red color. Powerful nose, fruity aromas with raspberry and black cherry flavors. On the palate, it is full-bodied, opening with toasted notes (cocoa), testifying to a fairly long aging (16 months) with a slight proportion of new barrels.
Brouilly "The Two Friends"
Château de la Chaize 2022. On the nose, intense aromas of red fruits, ripe strawberries and some delicate floral notes underlining discreet spices. Perfect balance between the red fruits bursting with maturity (cherry, strawberry) and a beautiful freshness, intense finish on velvety tannins
Pinot Noir (Alcohol-free)
Domaine Chavin, this 100% Pinot Noir dealcoholized French wine accurately expresses the typicity of the grape variety in a supple and balanced style. Without added aromas or preservatives, it offers a natural, expressive and faithful alternative to the world of wine, for a modern and refined tasting.

Apéritifs

Garden Gin (100% Burgundy)
Db27 (4cl). Le Gin du Jardin was born from the idea of making the most local Gin possible by using original plants. In the courtyard of the 27db workshop in Dijon, Baptiste Debeaumont has planted several varieties of Tagetes and Basil, these plants, which have reached maturity, are macerated fresh with juniper berries harvested locally and pounded by hand. The maceration, here extremely long for a Gin lasts 3 months, followed by a single distillation in a traditional still in order to preserve the maximum of aromas. The nose: Heady and complex, reveals deep and fresh root aromas, then develops into notes of spices, mint infusion and dried flowers. The palate: Soft, warm and round at the start, gradually spreading over the seconds, the whole aromatic panel is revealed, floral, citrusy, resinous, herbaceous. A very nice length with aromatic notes.

Whisky

From a spring glass
Maison Benjamin Kuentz Glass of 4 cl
46 ° A whiskey of fine weather, fresh, supple and a surprising bit (From a) Verre Printanier surprises with its lightness and freshness. Like Nature when it is reborn, this Single Malt from the land of plums awakens new scents and colors. It is distinguished by a well-defined taste between the raw aroma and the fragrance. But reserve its share of secrecy which holds in suspense. The dominant is fruity, playing with notes of white fruits and fresh cereals, when the finish is spicy, with a nice suppleness. An olfactory walk in the open air, off the beaten track of whiskey.
With Vines particles
Maison Benjamin Kuentz Glass of 4 cl
46 ° Aux Particules Vines is a whiskey with a singular alchemy, a perfect harmony between malt and grape that brings together French wine and cereal traditions. Its fourth edition, which matured on the left bank of Bordeaux in the ex-cask of a great wine, gave it immense finesse, exhaling fruity and floral notes. This freshness of red fruits and flowers is enhanced by aromas of fresh and dried fruits as well as by fine spices on the finish. A powerful palate that is ideally accompanied by a fresh fruit tart, or a white chocolate pistachio dessert. In the rest of the collection, this fourth edition is a tribute to the work of the vineyard.
Whiskey vegetal Musette Maison Kuentz
It has the freshness of a garden sheltered from summer. A festival of floral notes and cereal flavors makes Végétal Musette a whiskey of wild youth and liveliness, free to flirt with sparkling water. On the nose, a swing of aromas of malt, wet grass, Granny Smith, crunchy pear and tropical vanilla. The palate, creamy and light, gently abandons the spice and revives around eucalyptus, lemon and green pepper. Its finish concedes a touch of heat in the summer, between honey and dried malt. 4cl

The 25 year old Japanese Hakushu whiskey is extremely rare! It is the oldest single malt from the Hakushu distillery! The 25-year-old Hakushu has a rich, precise and fine character. It pays homage to the most discreet of Japanese distilleries, located in a region nicknamed the Japanese Alps. Freshness, minerality, spices, exotic fruits and citrus fruits are expressed wonderfully. On the nose: this old Japanese whiskey is rich, harmonious, mineral, spicy (cinnamon). Jack Daniel's_ Whiskey
4cl With its 74 aging cellars containing 1.6 million barrels, Jack Daniel's is one of the largest distilleries in the world. But it is certainly not this gigantism that gives what we nickname "Jack" its unique character and its distinct aromas. Unlike its Bourbon-producing cousins in Kentucky, Jack Daniel's respects the Lincoln County Process, a unique process that involves passing the distillate through a layer of maple charcoal before it is casked. This makes it possible to retain the heaviest elements and promotes the homogeneity of the distillate. Find out more
