Domaine Gelin 2022. A Fixin full of finesse and elegance. It presents a pleasant nose, with notes of spice, pepper, and licorice. Beautiful notes of red fruits, such as cherry and raspberry, are also revealed, almost slightly jammy. Serving suggestion: Eggs Meurette, Sweetbreads
Brouilly "The Two Friends"
Château de la Chaize 2022. On the nose, intense aromas of red fruit, ripe strawberries, and delicate floral notes underscore subtle spices. Côte-de-Nuits “Les Créoles”
Domaine Cluny 2021, from a vineyard in Brochon and soon to be classified under the Fixin appellation, has a brilliant ruby color. The nose is straightforward, with aromas of crisp red fruits, cherry, and plum, developing delicate peppery and woody notes with aeration. The palate is focused and precise, echoing the aromas on the nose. Suggested pairings: Roulade of chicken, sweetbreads, cookies
Fixin 1er Cru “Clos du Chapitre”
Domaine Guy et Yvan Dufouleur: The wine has a very deep, intense, black cherry color. The nose is complex and subtle, with aromas of black fruits (blackcurrant, blackberry, blueberry, etc.), truffles, and licorice. With age, aromas of fur, musk, and even wildness emerge. The attack on the palate is direct and powerful, the tannins are present but fine, with a beautiful length. Serving suggestion: Ribeye steak, Eggs Meurette
Monthélie “Sous Courts” 2023
Domaine Perrin. Originating from a beautiful vineyard in Monthélie, the vinification of this "Sous Courts" respects traditional methods, allowing the wine to develop aromas of red and black fruits, accompanied by subtle notes of undergrowth and spice. The Côte de Beaune, with its limestone soils and continental climate, lends this wine a beautiful minerality and a harmonious structure.
